Pear and carrot bran bread

My husband loves fruits. On weekends, he goes on fruits shopping sprees and buys so much fruits he can never finish eating.

I found a couple of very well ripen pears in his fruit basket yesterday and decide to make this bread.

Pear and carrot bran bread

1 cup bran
1 1/2 cup strong flour
1/3 cup sugar
1/2 baking soda

2 pears grated; makes about 1 cup
1/4 cup grated carrot
2 eggs, beaten
1/4 cup melted butter

Mix dry and wet ingredients and allow to stand 20 minutes.
Put the mixture in a standard size bread tin.
Bake in a preheated 350 F (180 c) oven for 75 min or a inserted skewer comes out clean.
I used smaller tins and baked 40 mins.

It is a high fiber, very healthy and moist cake bread. My younger son is a very fussy eater and does not eat any veggies or fruits, but he likes this bread.

Of course I don’t tell his what’s in it.

    I’m going to buy pears, bran and carrots and try this loaf, is strong flour bread flour and baking soda bicarbonate of soda? Another question – how do you do the indentations (eye sockets) for the eyes on your furry friends’ faces? Your faces have SO character, mine tend to look a bit “flat”.

    Yes to the question on the ingredients. You can also add 1/4 to1/2 cup chopped pecans, too. This has been my favorite recipe. You want quite ripen pears for this.
    To make the indentations, I simply pull the thread after I make french knots. Try to take the needle out from the yarn separating the fiber so that the eyes won’t sink through the stitches. Make one french knot for one eye and move to the other one, pulling the thread before you make the next french knot.
    You could work a gathering thread around the eye line, too if you would like.
